The world outside the sliding glass doors looks like a winter wonderland. There is probably a foot of snow to navigate and the little dogs aren’t happy about it. The snowplow has not appeared yet, although I can tell a few hearty souls have traveled towards the main road.
Dinner last night was very, very good. Our friend April had given us a gift certificate to the local fresh seafood market for Christmas last year and again this year. We’d been saving it to enjoy with my parents on their next visit, but since that isn’t likely to happen until spring or summer we’ve started using it. Last night we had apricot smoked salmon with a wild rice and shallots, dried cranberries, raisins and chopped toasted pecans plus a side of asparagus. It felt very elegant and we’ll do that again. The salmon was already thoroughly cooked when it was smoked, so all I had to do was heat it in the microwave for about a minute and a half. Off the charts on the yummy scale.
Since it is still snowing and predicted to continue today, I don’t know if I will get much done in the way of shoveling. Sigh….winter is a lot of work.
We do have two properties under contract and that is a very good way to start the new year. One may close as early as January 20th and the other at the end of Feb. Now we need to move past the holidays and start finding other buyers.
Sounds like good news on the health front in FL. Guess my dad’s throat is feeling better and they have the thrush on the mend. I’m glad he isn’t recuperating here, my mother and brother would have to invest in snowshoes for their visiting convenience!
